The Nero d’Avola Il Sivo grapes are harvested by hand at the end of September after a slight drying on the vine. The late harvest allows the development of aromas and flavors that express themselves in the glass with an unparalleled sensation of roundness and depth. After fermentation, the wine is aged for 18-24 months, with bâtonnage performed to resuspend the noble lees and promote the transfer of compounds to the wine that will impart softness and elegance.
