Description
A noble, elegant wine with great structure. Its production area is limited to the municipality of Montalcino, in the province of Siena, a reason that contributes to making it an exclusive and sought-after wine. Its origin dates back to the 19th century, when Ferruccio Santi selected and vinified grapes of a Sangiovese variety locally defined as "Brunello" due to the dark color of the berries. Over the years, this wine has confirmed its value, distinguishing itself, among other things, for its long evolutionary process. During the important maturation period, Brunello di Montalcino Piccarda Donati slowly absorbs the aromas and scent from the wooden barrels and barriques where it rests for many months. A wine of great longevity and elegance, it reveals itself by improving with the passage of time. Label: "Wisdom III" by Tetsuji Endo, a Japanese artist who lives in Tuscany. The tree represents the wisdom of humanity, the labyrinth the constant search for something better for one's existence. Technique: ink, pencil and watercolor on paper aged with different techniques.
- Production area: Montalcino, province of Siena, Tuscany
- Grapes: 100% Sangiovese. Alcohol: 14% vol
- Vinification and aging: after harvesting, the grapes are left to macerate pre-fermentation in large steel tanks for 3 days at a temperature below 15°. The actual fermentation lasts for 25 days at a controlled temperature not exceeding 28°. Once the sugars are depleted, the cap of skins is covered with more new wine and, sealing the tank, it is left to macerate for another 60-90 days. Following racking, the wine returns to large steel tanks and remains there until malolactic fermentation is complete. Towards the end of the spring following the harvest, the wine is moved to French oak tonneaux for 24-30 months, then spends another 12 months in cement tanks. It concludes its aging in bottle in the 4th year after harvest for another 12 months
- Color: red tending to garnet, clear and brilliant. Aroma: intense, persistent and ethereal, with notes of licorice and cherry. Taste: elegant, full-bodied and dry, with soft tannins and a persistent finish
- Pairing: structured dishes such as roasts, game, truffles and aged cheeses. Also enjoyable as a meditation wine
